Description of radish root ferment filtrate
This ingredient is a preservative created by fermenting Raphanus sativus (radish) roots with the microorganism Leuconostoc, a lactic acid bacterium. Interestingly, the two compounds thought to be responsible for the preservative action of this ingredient are salicylic acid and an ammonium salt. Neither appears to be from the fermentation, but is present because these ingredients are used in the soil to manage the growth of the radishes, ensuring uniform sizes and coloring.
